Ingredients (Serves 4): 

  • 400g boneless chicken thighs or breast. Or any protein of your choice.

  • 2-3 tablespoons Thai Green Curry paste (Now available is most supermarkets)

  • 400ml coconut milk

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 1 medium aubergine, cubed 

  • Kaffir lime leaves (Asian grocery stores or online, £1-£2)

    • Alternative: Use lime zest if kaffir lime leaves are unavailable.
  • 1-2 tablespoons fish sauce 

  • 1-2 tablespoons palm sugar or granulated sugar 

  • Thai basil leaves (Asian grocery stores, £1-£2)

    • Alternative: Sweet Italian basil or just regular basil will do!
  • Here's the magic secret ingredient to take your Thai Green Curry to irresistible levels of Umami bliss: Thai chicken stock seasoning powder  (Asian supermarkets £6 - £8 per pack: Well worth it)
  • Finally, you may want to add a few extra chillies if you're really into spicing it up!

Ingredients needed to make a Thai Green Curry

PRO TIP:

First things first. if you have a rice cooker, get your rice cooking now!! Don't make the same mistakes as us, So many times we cook delicious food but forget to pop the rice on!! 

Cooking Instructions:

  1. Heat a large pan or wok over medium-high heat with a tablespoon of oil.

  2. Add 2-3 tablespoons of the Thai Green Curry paste and sauté for 1-2 minutes until fragrant, use the back of your cooking spoon to smash up the paste in the pan.

  3. Add the chicken (or your choice of protein) and stir fry with the paste until it's no longer pink on the outside.

  4. Pour in 400ml of coconut milk, stirring slowly so as not to cause any splashing.

  5. Add the sliced bell peppers and aubergine (or your choice of vegetables) to the pan.

  6. Throw in 3 or 4 Kafir lime leaves into the mixture, or add lime zest.

  7. Season with 1-2 tablespoons of fish sauce and 1-2 tablespoons of palm sugar (or a sugar alternative). Adjust to taste. 

  8.  Add half a tablespoon of the Chicken seasoning powder and stir

  9. Let the curry simmer for about 10 minutes until the chicken is thoroughly cooked through and the vegetables are tender.

  10. Just before serving, add a handful of Thai basil leaves (or your basil alternative) and stir them into the curry until they wilt.

  11. Serve your delicious Thai Green Curry with jasmine rice and enjoy!

  • Taste test regularly and adjust the seasoning as you go along to suit your preference. to do this simply follow this:
    Too spicy = Add more sugar
    Too sweet = Add more fish sauce
    Too fishy / salty = Add more coconut milk / water
    Too wet = Add half a teaspoon of diluted cornflour
    Too thick = add more coconut milk or water

  • Do experiment with the level of spiciness to your liking by adjusting the curry paste or adding chopped fresh chillies.
  • Don't rush the cooking process; let the flavors develop by simmering.
  • Don't check the spiciness on your infant children; this will only end badly for all involved!
  • Plate up the curry in your favourite bowl and garnish the top with a few drops of any leftover coconut milk and a couple of fresh basil leaves perched on top!
