- 400g boneless chicken thighs or breast, or any protein of your choice
- 2-3 tablespoons Thai Yellow Curry paste (readily available in most supermarkets)
- 400ml coconut milk
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium potato, diced
- 1 onion, sliced
- 1-2 tablespoons fish sauce
- 1-2 tablespoons palm sugar or granulated sugar
- 1-2 tablespoons chicken stock seasoning powder (available at Asian supermarkets)
- Thai basil leaves (available at Asian grocery stores)
- Optional: A few extra chilies for added heat
Let's Get Cooking:
- Start by heating a large pan or wok over medium-high heat with a tablespoon of oil.
- Add 2-3 tablespoons of Thai Yellow Curry paste and sauté for 1-2 minutes until fragrant, using the back of your cooking spoon to break up the paste.
- Add the chicken (or your choice of protein) and stir-fry with the paste until it's no longer pink on the outside.
- Pour in 400ml of coconut milk, stirring slowly to prevent splashing.
- Add the chopped bell peppers, diced potato, and sliced onion to the pan.
- Season with 1-2 tablespoons of fish sauce and 1-2 tablespoons of palm sugar (or a sugar alternative). Adjust to taste.
- Sprinkle in 1-2 tablespoons of chicken stock seasoning powder and stir well. Allow the curry to simmer for about 10 minutes until the chicken is cooked through and the vegetables are tender.
