Ingredients (Serves 4):

  • 400g boneless chicken thighs or breast, or any protein of your choice
  • 2-3 tablespoons Thai Yellow Curry paste (readily available in most supermarkets)
  • 400ml coconut milk
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium potato, diced
  • 1 onion, sliced
  • 1-2 tablespoons fish sauce
  • 1-2 tablespoons palm sugar or granulated sugar
  • 1-2 tablespoons chicken stock seasoning powder (available at Asian supermarkets)
  • Thai basil leaves (available at Asian grocery stores)
  • Optional: A few extra chilies for added heat 


Let's Get Cooking:

  1. Start by heating a large pan or wok over medium-high heat with a tablespoon of oil.
  2. Add 2-3 tablespoons of Thai Yellow Curry paste and sauté for 1-2 minutes until fragrant, using the back of your cooking spoon to break up the paste.
  3. Add the chicken (or your choice of protein) and stir-fry with the paste until it's no longer pink on the outside.
  4. Pour in 400ml of coconut milk, stirring slowly to prevent splashing.
  5. Add the chopped bell peppers, diced potato, and sliced onion to the pan.
  6. Season with 1-2 tablespoons of fish sauce and 1-2 tablespoons of palm sugar (or a sugar alternative). Adjust to taste.
  7. Sprinkle in 1-2 tablespoons of chicken stock seasoning powder and stir well. Allow the curry to simmer for about 10 minutes until the chicken is cooked through and the vegetables are tender.
  8. Just before serving, add a handful of Thai basil leaves and stir until they wilt. Serve your delightful Thai Yellow Curry with jasmine rice and savour the flavours!

Taste-test regularly and adjust the seasoning to your liking.

Too Spicy - Add a little more coconut milk 
Too Sweet - Add a little more salt (Fish Sauce)
Too Salty - Add a little more sweetness (Sugar) or add a little water
Too Watery - Add a little bit of diluted cornflour to thicken it up

Experiment with different proteins and vegetables to personalise your curry. Adjust the level of spiciness by adding more or less curry paste or fresh chilies. Allow the flavours to develop by simmering the curry gently for longer.

Plate up your curry in your favourite bowl and garnish with a drizzle of coconut milk and a few fresh basil leaves on top.
